Dessert, anyone?

As many people asked us for the recipe of our almond fig tart via Instagram, we thought we’d reconstruct the recipe share it with you guys.

Dario is a big fan of figs. He snacks on them at work and in front of the TV – doesn’t matter if they are dried or fresh. I myself am not all too fond of them. But we had some figs at home and I’ve seen great pictures of beautiful creations online and I wanted to surprise Dario with some dessert, he’d hopefully love. And after trying a piece, I was surprised myself, cause they taste really good on a cake.

So let’s get crackin’! Here’s what you’ll need to do:

Ingredients 5 dried or fresh figs 360g whole wheat flour or spelt flour (we prefer spelt) 150g brown sugar 150g ground almonds 2 dl almond milk ½ tablespoon salt (or a bit more if you like a bit of a contrast in your dessert) 1 teaspoon baking powder maple syrup some vegan margarine for the form

How to

  1. Preheat your oven at 180°C

  2. Grease a 24cm form with some vegan margarine

  3. Mix all the dry ingredients well (flour, sugar, almonds, salt and baking powder)

  4. Add the milk and a dash of maple syrup to the dry ingredients. If you’d like a sweet cake, then add more maple syrup than if you prefer your cake not overly sweet

  5. Check the texture of your cake. Did you get a good batter? Then add the batter to the form and smoothen it out.

  6. Cut the figs in small round slices.

  7. Top the cake of with the figs

  8. Brush some maple syrup on the figs, so they caramelize while in the oven

  9. Bake for 50 – 60 minutes (check on the cake after a while to see that the figs don’t turn black)

  10. Enjoy with some whipped soy cream

Hope you’ll enjoy it just as much as we did. Have you tried our vegan lemon cake or rhubarb cake?
