Easy Vegan Açai Bowl

Summer’s officially started in Switzerland and we’ve already enjoyed some quality time out in the sun at the river we live at. And what is better to indulge in, than a delicious and healthy vegan açai bowl? We whipped this up this morning for breakfast and wanted to share our super easy and quick recipe with you.

Açai bowls originally are from Brazil. Similar to blueberries, the Açai fruit as a small, round and black-purplish fruit. Nowadays Açai bowls are a huge trend and everybody wants and loves them. No wonder, cause the bowl are healthy and delicious, perfect for hot days and you can get really creative with the toppings.
While spending a month on Hawaii, we got to try so many different variations of these bowls, but they all had one thing in common: They were super tasty! What we’ve learnt with our fair share of Açai bowls, is that we love to top it off with granola, peanut butter, cocoa nibs and fresh fruit.
Back to today: It’s sunny out, we miss Hawaii so we quickly made a really simple and easy breakfast and wanted to share it with you. Hope you enjoy it just as much as we do.

Prep time: 15 minutes Serves: 2 people

Ingredients: puree 1 banana 150ml cashew milk 400 g frozen berries (we use a mixed variation) 2 teaspoons of Açai powder 1 handful of apricot kernel (you can als use almonds) 1 squirt of agave syrup
Ingredients: toppings Hemp seeds Cocoa nibs Peanut butter Blueberries Raspberries Homemade Granola (here’s our recipe)
How to
Add banana and milk to your mixer first. Then add the frozen berries, the Açai powder and the nuts.
Blend till smooth
Add the agave syrup and blend again. See if it is as you like if. If you prefer sweeter bowls, add some more syrup.
Put the puree into a bowl and top of with whatever you like
